Pumpkins. Leaves. Apples. Halloween. Cinnamon. Candles. Spices. Sweater weather.

How can anyone on earth not adore fall? How?!

The nostalgia that hits me when I see the decorations and smell the season’s scents is out of this world. Growing up in Minnesota, I grew up with four ideal seasons just like in the movies. The summers were hot and humid. The springs were rainy and filled with flowers. The winters were cold and snowy. And the fall? Oh the fall was filled with chills and dazzling colors. My mom decorated every fall, and we baked. Apple crisps and pumpkin pies and baked pumpkin seeds and all that goodness.

Today I was especially feeling the holiday spirit. When I went to get some cleaning supplies at Fred Meyer I also made a stop in the seasonal section. Window clings, candles, candle holders, towels, and baking supplies. OH MY.

Oh my to these Pumpkin Chocolate Chip Oat Bars. I found these on Pinterest via Ambitious Kitchen (recipe in link). I was so impressed because I am often hesitant to make baked goods “healthy” but these babies were vegan, gluten free, AND tasted great.

Since my husband is out of town every, single one of these bars is mine. I’m trying to space them out over this week, of course.

I bought apples and extra cans of pumpkin because the holiday baking has just begun. Now if only Hocus Pocus and Halloweentown were streaming on Netflix.
